Winemaking

With a 100% manual harvest, our wines are truly and exclusively aged on lees according to an ancestral method. They spent at least six months on this deposit called «lie» which is none other than the pulp of the grapes driven by the juice at pressing, and which after fermentation is deposited at the bottom of the tank. Throughout the winter, the wine feeds on the living material of lees. It acquires an aromatic blossoming and a balance that ensures good quality and stability over time. It is during this period that our wine is charged with carbon dioxide which gives it these small bubbles characteristic of the «on lees» which are said to pearl on the tongue.

On our special cuvées, a minimum 25 months ageing on Lie ensures a great aromatic richness on the wines.

We are very attentive and meticulous in the elaboration of our wines, to obtain an optimum quality. We practice an old-fashioned winemaking without commercial yeast, 100% indigenous yeasts, moderate filtration on land is done before bottling.

Muscadet Sèvre and Maine

Appellation d'origine Controlée


Muscadet comes from the Melon de Bourgogne grape variety, it is a wine that can be drunk young, that is to say within two years after the harvest, but it can also be enjoyed more mature.

Our terroir allows us to produce wines of aging that evolve very favorably with the years and develop fully all their aromatic qualities.

Advice of accompaniment:

It is the ideal wine for all your crustaceans, fish, seafood, vegetable preparations as well as for all your dishes that require a dry white wine.
In both cases, the Muscadet can be enjoyed fresh and not iced, between 10 and 12°C it develops all its aromas.

 

Fraicheur Iodée de l'Atlantique® 

White French wine ( Vin de France Blanc )

 

From the Folle blanche grape variety, it is a dry white wine of a great freshness with this hint of iodine present that reminds us the ocean with a beautiful minerality.



Serve it well fresh.


Advice of accompaniment:

It is the wine that will fit perfectly with your oysters and other shells, it will also go with a melon, raw vegetables and any other fresh summer starter.

Les 4 Vents

White French wine ( Vin de France Blanc )


The 4 winds (which is the name of plot of the Estate) comes from the grape variety 100% Melon de Bourgogne.

Our terroir allows us to produce wines of aging that evolve very favorably with the years and develop fully all their aromatic qualities.

A cuvée des 4 Vents (in bottle only) resulting from a 25-month ageing on lees is available a next cuvée of 32 months on Lees .

It is the ideal wine for all your crustaceans, fish, seafood, vegetable preparations as well as for all your dishes that require a dry white wine.

In both cases, the 4 Vents can be enjoyed fresh and not iced, between 10 and 12°C it develops all its aromas.

Le 54 l'Original®

Red French wine ( Vin de France Rouge ) 


Made from the grape variety Plantet, also known as 54-55 an old grape variety of the past, it is a very fruity and light red wine with beautiful red fruit aromas, supple and greedy, little tannic it will be the ideal wine for your meals.
It is also very popular with the Feminine audience!



Advice of accompaniment:

To drink alone, or as an accompaniment to your meals.

To taste (16-18°C), the summer you will appreciate it cooler.

Le 54 l'Original® Rosé

Pink French wine ( Vin de France Rosé ) 


Also from the grape variety Plantet, also known as 54-55 an old grape variety of the past, it is a very fruity and light rosé wine with very beautiful aromas of red fruits, of a beautiful color it will have perfectly accompany your aperitifs and your meals!




Advice of accompaniment:

To drink alone, or as an accompaniment to your meals.

Serve fresh (8-10°C).

Les 4 Vents en Effervescence

Sparkling white French wine ( Vin de France Blanc Effervescent )


This sparkling wine comes from a blend of 2 grape varieties, Melon de Bourgogne and Folle Blanche, we selected our cuvées to develop this blend with an addition of carbon dioxide gas to the bottling at the Domaine.

It is located between a Brut and a half-dry with a fine bubble to be able to taste it at any occasion!

For all your festive occasions, aperitifs, dessert, cocktails!

The weeding of our vines is 100% mechanical and manual.

Marketing


We market all our wines live, packaged in bottle, Bag in Box, magnum.

Everything is done on the estate, from the harvest to the market.


Our outlets are local and national organic stores (Biocoop), restaurants, wine shops, export, trade fairs and of course the sale to private individuals at the Estate and/or home shipping.
